Poster Abstract

Chestnut is characterized by a limited shelf-life.

Among the most diffused method for the conservation of this fruit there is the drying process.

This one is followed by a rehydration process that make it edible and desirable.

The classical rehydration is difficult because of its long time and the unhomogeneous distribution of the absorbed water.

After the dehydration the use must accur in short time as the higt content of starch united to the high content of water cause a rapid deterioration for the starting of the chemical, enzimatic and microbiologic reactions.

For the homogeneous and rapid rehydratation of the dried fruit has been got ready a simple method that use steam at 115 ° C for 103’, allowing a best diffusion of the water into the product.

The proposed method does not need of the fruit drying as in the traditional practice, allowing a prompt marketing.

Besides the product packeting preserves it, extending its shelf-life.


La castagna è caratterizzata da una limitata shelf-life.

Tra i metodi più diffusi per la conservazione del frutto c’è l’essiccamento.

Questo viene seguito da reidratazione che lo rende edibile ed appetibile.

La reidratazione classica risulta problematica per i lunghi tempi di processo e per la non omogenea distribuzione dell’acqua assorbita.

Il consumo deve avvenire in tempi brevi in quanto l’alto contenuto in amido del frutto associato all’alto contenuto di acqua ne porta ad un rapido deterioramento per l’avvio di reazioni di tipo chimico, enzimatico e microbiologico.

Per la reidratazione uniforme e rapida del frutto secco è stato messo a punto un semplice metodo che utilizza vapore a 115° C per un tempo di 130’, consentendo una migliore diffusione dell’acqua nel prodotto.

Il metodo proposto non prevede la fase di asciugatura del frutto, come avviene nella pratica tradizionale, consentendo un’immediata commercializzazione.

Inoltre l’imbustamento del prodotto lo preserva, prolungandone la shelf-life.
