The acceptance of directives 92/46 and 92/47EEC, with regard to the production of milk and derivates, allows shepherds with ovine or goat herds in the wild or transhumant in the Mediterranean Basin and who almost never have access to the necessary structures, to sell cheese and ricotta only from the point of production. This fact causes serious problems for the shepherds, forcing them, for the moment, to give their fresh milk to large industrial concerns which exploit their predominant position and fix unsatisfactory prices.

In order to provide the shepherds the necessary means for production and processing of the milk in correct hygiene conditions and in full respect of current regulations, and given the fact that construction of purpose-built premises for transhumant shepherds or for those permanent shepherds who operate within parklands isn’t permitted, an integrated system for milk production and processing has been planned and built. This consists of two modules, one of which carries equipment for mechanical milking of sheep and goats, while the other carries a dairy for processing. In detail the milking module houses a system of automatic capture with 8 places and 4 milking groups, all equipped with an automatic washing system. The processing plant module can deal with 200 litres of milk per cycle, and as well as the equipment necessary for dairy treatment (processing tank suitable for thermal treatment of milk and a dripping table), there is also a 100-litre refrigerator, a water collection tank and a heat generator, which complete the milking module’s equipment. Both modules can be transported, one at a time, by a dedicated motorized tipper track, classifiable as an agricultural tractor, equipped with 4-wheel drive, two of which can be taken out, and 35 kW in power.

Il recepimento delle direttive 92/46 e 92/47CEE in merito alla produzione del latte e dei suoi derivati, consente ai pastori di allevamenti ovi-caprini bradi e transumanti del bacino del Mediterraneo, i quali non dispongono quasi mai delle previste strutture, di eseguire la commercializzazione del formaggio e della ricotta solo presso lo stesso luogo di produzione. Ciò sta comportando, per essi, seri problemi, costringendoli, al momento, a conferire il latte crudo prodotto alle grosse aziende industriali che, sfruttando la loro posizione predominante, fissano i prezzi di acquisto a livelli insoddisfacenti.

Per fornire ai pastori i mezzi necessari per la produzione e la trasformazione del latte in corrette condizioni igieniche e in ottemperanza alle vigenti normative, non essendo pensabile la costruzione di appositi locali per i pastori transumanti o per quelli stanziali che operano all’interno di parchi, è stato studiato e realizzato un sistema integrato con il quale produrre il latte e trasformarlo. Si tratta di due moduli su uno dei quali è installato un impianto per la mungitura meccanica di ovi-caprini, mentre sull’altro è sistemato un caseificio per la trasformazione del latte prodotto. In particolare il modulo per la mungitura ospita un sistema di autocattura ad 8 poste con 4 gruppi di mungitura, dotato di impianto per il lavaggio automatico. Nel modulo allestito per consentire la trasformazione di 200 litri di latte per ciclo, oltre alle attrezzature necessarie per la caseificazione (vasca di lavorazione in grado di realizzare anche il trattamento termico del latte e tavolo spersore), sono installati un refrigeratore da 100 litri, un serbatoio di accumulo dell’acqua e un generatore di calore, che completano la dotazione impiantistica del modulo per la mungitura. Entrambi i moduli possono essere trasportati, uno allo volta, da un apposito autocarro, omologabile come trattrice agricola, dotato di 4 ruote motrici, due delle quali disinseribili, della potenza di 35 kW.
